Coconut Pancakes

Looking for something out of the "norm" for breakfast? Do you like coconut? How about pancakes? Try the combination of the two! Inspired by my all-time favorite Coconut French Toast, and the fact that my son LOVES pancakes and I was wanting a new flavor for our rotation...these pancakes are awesome!





Whisk together then set aside:

1 c. flour
1 t. baking powder
1\2 t. baking soda
1\4 t. salt

In a separate bowl, whisk together:

1 egg
2 T. sugar
2 T. melted butter
1\2 t. coconut extract
1\2 t. vanilla extract

Add to egg mixture:

3\4 c. milk
1\4 c. canned coconut milk 
(or for richer pancakes, use 1\2 c. milk and 1\2 c. coconut milk)

Pour egg mixture into dry ingredients, stirring just until combined. Fry as usual till golden. This makes about 10 - 4" pancakes. Serve with a light sprinkle of flaked coconut and drizzle of Coconut Sauce.

Coconut Sauce:

3 T. butter
1\2 c. sugar
1\4 c. + 2 T. canned coconut milk
pinch of salt 1\2 t. baking soda
1\4 t. coconut extract

In a saucepan, combine butter with sugar and coconut milk, stirring over med heat until sugar is completely dissolved and mixture reaches a boil. Remove from heat and whisk in baking soda and extract. Serve warm over Coconut Pancakes. 

Try adding a dallop of whipped cream for Coconut Cream Pancakes, or serving them with fresh slices of bananas and\or strawberries. Those fruits are delicious with the coconut! Enjoy :)
